Mushroom Stroganoff for a Rainy Day


For all the beautiful days we’ve been having, we were definitely due for a doosey of a rain storm.  And that is exactly what we got. It started in the middle of the night around 3 with big claps of thunder and continued all morning.  And then the rest of the day, it hailed on and off, and rained in sheets! Sideways!!
So, what’s a girl to do when the day is gray? Make comfort food for dinner.

Growing up, my mom used to make “beef over noodles.” It was one her staples.  So I “vegan-ized” it, and made it with mushrooms!
I got this recipe from the wonderful, gluten-free, vegan blog, Oh She Glows.
"hearty" pasta without the heaviness!
Here’s what you’ll need:
1 vidalia onion, chopped
10 button mushrooms, sliced
3 garlic gloves, minced
2 handfuls of spinach, chopped
1 T fresh thyme
1 1/2 T tamari (gluten free soy sauce)
1 T corn starch
1 1/4 c low sodium veg stock
Sautee the onions and garlic in 1 tsp EVOO. After they soften, add the mushrooms.  Allow them to cook down and release their moisture. While they are cooking, whisk the cornstarch into the vegetable stock so it dissolves, and then set aside. Once the mushrooms are tender, add in the tamari and thyme. Let that cook for a couple minutes, and then stir in the stock mixture and the chopped spinach. Let it thicken up for 4-5 minutes, and then mix it with your pasta and a bit of the reserved pasta water.

For our protein, I served broiled flounder. So wonderful! Wild, and ocean caught from Lobsta Bakes. I broiled it with 1 tsp EVOO, salt, pepper, lemon zest and juice. Moist, succulent, and super flavorful!

This was definitely a rainy day cozy supper. The mellow, earthy flavor of the mushrooms paired so nicely with the depth of the stock and the lemony “herbiness” of the thyme. It was amazing how this sauce thickened up due to the cornstarch! From the way this tasted, you would have thought there was a stick of butter, giving it its body and its shine.  Believe it or not, this meal is extremely healthy! The mushrooms offer Vitamin C, B6 and B12, which boost your immune system. The spinach is a great source of niacin, zinc, iron, and calcium! And this dish is low fat and extremely delicious!
